2. After 60 minutes, turn off the Instant Pot and remove the lid. Let the meat rest for 10 minutes. Remove the pork from the liquid and shred it. Return the shredded pork to the pot and stir in the chipotle chili powder, cumin, garlic powder, salt, pepper, and lime juice. Stir well.
3. Turn the Instant Pot back on and set the timer for 30 minutes. Once the time is complete, press Cancel.
